Making Goya Champuru – Okinawan Bitter Melon Stir Fry

The iconic Okinawan dish, Goya Champuru is a delicious mixture of bitter melon, pork or Spam and egg. The “goya” in the Okinawan dialect for the distinctive bitter melon and “champuru” means a stir fried mixture. I`ve had this a few times in Okinawan restaurants and have always found it to be delicious. As the name suggests, bitter melon is bitter but can be prepared to remove much of it and become tasty. Despite the name, it`s a vegetable not a fruit and is a cousin of courgettes.
